The Cold Spring Economic Development Authority visited the Cold Press Café on Monday, January 12, 2026. Casey Dierkhising, Owner gave us a tour of the café, and explained how he opened his business in 2019, shortly before COVID, and it is still thriving today.
Casey’s interest in roasting beans began from a friendship with a heart surgeon who shared his gift for roasting beans in small batches to ensure consistency, freshness, and flavor. When he passed, he graciously left his coffee roaster to Casey, which he is still using today.
Cold Press Café serves a large variety of coffee beverages, along with breakfast and lunch meal choices, all fresh and made from scratch.
